Wait a minute, I've actually done it
After a long period of regret at not finishing this or starting a new project, I found the solution to my motivational and technical problems: PICO-8! It's essentially a retro game engine anyway, so I have an excuse to keep to limitations, in terms of graphics, sounds, and size, that I would choose to for the "style" of game that I'd be able make (well, graphically at least; I can't draw stuff at all). It also avoids the fundamental flaw of other retro "systems", in that the output is playable independently from the system itself, so no-one has to buy an additional technologically obsolete thing. Hopefully when I upload this, you can play it in your browser!
It's still tiny and crappy (which as we all know are secretly the best video games), but at least feels like a complete package now.
This still took me longer than I'd wanted, essentially only having a couple of hours free each weekend to look at this ("It took me 2 months to make; I thought it'd take 2 months to play!"), but I'm hoping that, with lots of other stupid ideas I have in my head, I'll be able to clog up itch.io present some fun games for people to try every few months.
Now I've got to hope I can retroactively swap out all the installer gubbins from the old Unity version without breaking anything...
